My Mid Summer Day Celebration Cake.
It’s cloudy and rainy here today for Midsummer but not to worry, I have cake!
So let’s spread the midsummer love.
This is a lovely easy apple sponge recipe to use for celebrating midsummer and is a really quick bake.
I love a good organic cuppa with mine but I’m told it pairs really well with a strong coffee too.
It’s good just warm or cold and mixes lovely with double cream. My favourite however is to drizzle organic honey over the top….yum!

I’ll pop the very easy recipe below :
100g butter (little extra for greasing tin too)
100g sugar
2 eggs
100g self raising flour
2 apples ( I use organic apples from @riverford)
Tea spoon of lemon juice
Baking tin
honey for drizzling (I use organic honey from @rowse)
Method
•Cream the butter and sugar together (either with an electric mixer or wooden spoon).
•Once smooth, add in one egg at a time.
•When all of the egg is well mixed, sieve the flour into the mixture. Once complete stir in the lemon juice.
•Pop the mixture to one side and take a little bit of butter and grease you baking tin.
•Now pop your mixture into the tin and gently spread evenly.
•Finally take your apples, peel and slice them. Arrange the slices on the top to your own design.
•Place in a pre heated oven of 180 / gas mark 4 for about 30- 40 mins but my oven is hot so you may want to check and adjust to your own ovens personality 😂
.Get a lovely yummy dollop of honey and drizzle over, if its your thing.
•Cut yourself a slice, pour a hot drink, sit down, relax and stuff your chops! 😁
