My lavender and honey biscuits.

It really feels like summer today so whatâs better than summer light honey lavender biscuits!

This is such an easy recipe thatâs light and delicate as well as delicious. Perfect for a biscuit treat when the weather is warm.
I think these lavender and honey biscuits pair really well with an Earl Grey tea or with a sparkling elder flower cordial.
I particularly like making them with acacia honey as itâs so light and sweet, but any good honey would work just as well. Eating lavender is much like aromatherapy. As in a little goes a long way and I use home grown lavender, which I grown naturally, without sprays or chemicals.
They are at their very best when first out of a warm oven, but will be fine kept in an air tight container for a day or two.

So here are the ingredients and recipe:
100g butter
100g sugar
1 egg yolk
180g self raising flour
1 tablespoon of honey
1/2 -1 table spoon of dried lavender buds / flowers.
Method:
Cream together (by hand or whisk) the butter and sugar.
Add the egg yolk and mix.
Add the honey and mix.
Add half of the flour until mixed, then add the rest of the flour.
Bring the mix together with your hands (gently but try not to over work it) and place on a lightly floured board.
Gently roll out the mix until about 1cm thick.
Take your lavender and sprinkle over the mix.
Now with your rolling pin, or fingers, press the lavender gently into the mix. At this point, you are also making the rolled out mix a little thinner too.
Take a cookie cutter (I used a 6cm diameter but any is fine). Cut out your biscuits and place on a lined partchment baking tray.
Cook in an oven at 175, about gas mark 3 for 8-10 minutes. Time and heat will vary a little based on your oven. Mine were ready at 8 mins.
Now sit down, put your feet up and enjoy!
